About the chefs
Chef Aron Schwartz
A San Diego native and a 1998 graduate of the Culinary Institute of America. He cooked at L’Auberge Del Mar, Charlotte Restaurant in Connecticut, and Lutèce in Las Vegas before returning to San Diego, and spent nearly fifteen years at the San Diego Marriott Marquis, eight of them as executive chef, where he built out three restaurants and was named Chef of the Fest at the San Diego Food and Wine Festival. His cooking is rooted in relationships with local ranchers, farmers, fishermen, and growers — a habit that started with childhood trips to Chino Farms with his father.
Pam Schwartz
A chef and sommelier who met Aron at the Culinary Institute of America in the 1990s. She worked in the kitchen at Nobu and lead a dinner at the James Beard House while a sous chef at Aubergine Restaurant in Hillsdale, NY. She began managing restaurants upon moving to San Diego. She became a sommelier while at Pamplemousse, groeing the wine program to one of the most respected on the West Coast. In 2018, she opened Ranch 45. She leads hospitality, wine, and events at Blank Slate.
APS Hospitality Group
Together they founded APS Hospitality Group, a San Diego catering and consulting company, and opened Blank Slate as their first independent restaurant. More on our story.
