Encinitas Event Space

Blank Slate is a private event venue and chef-driven restaurant at 101 North Coast Highway 101 in Encinitas, California, a few blocks from Moonlight Beach. We host private dinners, celebrations, and corporate gatherings — from a handful of people at the chef's counter to a full buyout of the restaurant and patio.

Every event starts with a blank slate. That isn't just the name. There's no fixed banquet menu and no package tiers to choose between. You tell us who's coming and what the night is for, and Chef Aron Schwartz builds the menu around it.

What we host

Blank Slate works for gatherings that want the food to be the point rather than the backdrop:

  • Rehearsal dinners and welcome dinners

  • Wedding receptions and elopement dinners

  • Milestone birthdays and anniversaries

  • Corporate dinners, client entertaining, and team celebrations

  • Holiday parties

  • Engagement parties, bridal showers, and baby showers

  • Wine dinners and tasting events

  • Celebrations of life

  • Chef's counter dinners for small groups

  • Full restaurant and patio buyouts

If your event isn't on this list, it probably still works. Ask.

The space

Blank Slate has three areas that can be used on their own or combined, indoors and out.

  • Chef’s Counter - Intimate events, kitchen view, tastings

  • Dining Room - Seated dinners, private parties

  • Patio - Outdoor receptions, cocktail events

  • Full Buyout - Large parties, standing receptions, corporate events

Indoor and outdoor space on the same property means the weather doesn't dictate the plan. Encinitas evenings cool off fast once the sun drops behind the 101 — the patio and dining room work together, and guests move between them.

The food

Menus are written custom for your event. Chef Aron Schwartz cooks seasonally and hyper-locally, with direct relationships to the growers and purveyors we buy from:

  • Chino Farms

  • Coastal Roots Farms

  • Brandt Beef

  • Kanaloa Seafood

  • Tunaville Market

That means your menu is shaped partly by what's actually good the week of your event. A dinner in August looks nothing like a dinner in February, which is the point.

Aron trained at the Culinary Institute of America, spent roughly fifteen years at the San Diego Marriott Marquis — eight of them as executive chef. He has cooked for two people and for two thousand.

Dietary restrictions, allergies, and preferences get planned for in advance rather than improvised on the night. Tell us when you book.

The wine

Pam Schwartz is a chef and sommelier who co-founded Ranch 45, worked at Nobu, and hosted dinners at the James Beard House. She helped craft the wine list at Pamplemousse Grille, turning it into one of the most respected wine lists on the west coast. She builds the wine for each event around the menu, at whatever level makes sense for the group — approachable by-the-glass pours, or bottles from the reserve list, which runs from Napa Cabernet and Sonoma Coast Pinot to vintage Champagne and Bordeaux.

Beer, non-alcoholic options, and zero-proof pairings are available for every event.

How booking works

  1. Tell us about the event. Date, rough headcount, what you're celebrating, and anything that matters to you about how the night should feel.

  2. Walk the space. Come see the dining room and patio, and talk through how the group moves between them.

  3. Build the menu. Aron proposes courses based on the season, your guests, and any dietary needs.

  4. Confirm the details. Timing, wine, seating, and anything you're bringing in.

  5. Show up. You host. We handle the rest.

You work directly with Pam throughout — one person, start to finish, not a rotating events desk.
